The
grapes used for Modolet sparkling wines are
grown on the hills of Rocca Bernarda.
These grapes were chosen for the fortuitous
combination of the characteristics of the soil
and climate in this limited space.
The vines are the very best because both Pinot
Nero and Pinot Bianco, delicate grapes requiring
great care, encompass a number of exceptionally
well-orchestrated and propitious factors.
The must derives from a light pressing, so that
even Pinot Noir grapes produce a white must,
which then undergoes the first fermentation.
A certain amount of time must pass before the
wine becomes clear, and only then is the sparkling
wine process started by the addition of selected
yeasts in order to achieve the desired softness.
Elegance and vitality are the qualities of a
sparkling wine. A fine perlage is its soul.
